Nieves grew up in Bilbao in Spain’s Basque region and developed an early passion for its produce and cuisine. She came to London in 1998 and worked in the kitchens of Simply Nico and Fino before launching the original Barrafina in Soho as the group’s first executive chef. She led the charge for 10 years, during which time they earned a Michelin star, before opening her first solo restaurant, Sabor, in 2018. Just eight months after opening, Sabor received its own Michelin star.
